Latkes 

  

You will Need:

4 medium potatoes

1 medium onion

2 eggs

3/4 cup flour

salt

vegetable oil

  

Step One - Grate the potatoes and onion into a large bowl. Press out any excess liquid.

 

Step Two - Add the eggs and mix well. Gradually add the flour until the batter is doughy but not dry. (You may not need all of the flour) Add salt to taste.

 

Step Three - Heat some oil in a frying pan to a medium temperature. Form the batter into patties. Fry until golden brown on one side. Flip and brown the other side.

 

Step Four - Drain on paper towels. Enjoy!

 

Variation - If you are unable to grate the potatoes and onion, you can still make latkes! Whir everything in the blender. Start with the eggs and onion. Gradually add the diced potatoes. Add the flour until your batter looks like very thick pancake mix. Fry as above.

Another Idea - Doughnuts are also popular for Hanukah! A quick and easy treat is Fauxnuts. Deep fry pre-made biscuits from a refrigerator tin. These will quickly turn golden brown. Drain on paper towels and roll in powdered sugar.
