A Cinco De Mayo Supper Dish

This is an easy to prepare supper dish that my family enjoys.

It is especially nice for warm days since everything can be done in a microwave.

And, no, it doesn't look like the picture above. Oh well. :-)

 

Ingredients

One package Vegetable Protein Burger Bits

One 15 ounce can of Tomato Sauce

Two tablespoons Chili Powder (or to taste)

One can Refried Beans

1 to 1 1/2 cups grated Cheddar Cheese

1 to 2 Tomatoes

About 2 cups Shredded Lettuce

Large Flour Tortillas

 

Step One - Combine Burger Bits, Tomato Sauce, and Chili Powder. Heat in the microwave for 2 minutes.

 

Step Two - In a microwave safe dish, put down a layer of flour tortillas.

 

Step Three - Layer the Burger Bits mixture, cheddar cheese, lettuce and tomatoes.

 

Step Four - Lay down some more flour tortillas. Make a layer with refried beans and cheddar cheese.

 

Step Five - Continue alternating layers until the dish is filled. Top with a layer of flour tortillas and cheddar cheese.

 

Step Six - Heat in the microwave about 6 minutes or until the dish is hot and the cheese melted. Enjoy!

 

Variations - You can easily alter this dish to suit your family's tastes. Use ground beef instead of Burger Bits. Use American cheese instead of Cheddar. Use Salsa instead of Tomatoes. Skip the refried bean layers. Add black olives, sour cream, chopped onions, or jalapenos.
